Tasting
Deep purple robe. On the nose, a bouquet of black berries, blackberry, blueberry, elderberry, and blackcurrant with hints of iris and violet. Combining fullness and complexity, the savory and dense palate offers a rich palette of fruity flavors, subtly spiced (pepper, nutmeg), enhanced by mineral notes typical of this limestone terroir. The finish, enveloped in juicy tannins, has a beautiful persistence, promising the wine’s longevity.
Vinification
Fermentation lasts approximately three weeks. Aged on fine lees in oak barrels for approximately 12 months. Lightly filtered.
Guard
This Grand Cru improves with age and can be kept for 10 years or more depending on the vintage.

Cured meats, truffle sausage, country pâté with pepper, poultry liver, grilled meats, pasta, rice with mushrooms, steak tartare, duck breast with green peppercorns, pasta with beef ragù, stuffed ravioli, saddle of lamb with thyme, chateaubriand, venison stew, roast chicken with ceps, not too strong cheeses.
